My toddler son is, like most toddlers, a little set in his ways with food at times. He most definitely has his favorites for dinner and with breakfast, for a while it was all about pancakes, then all about oatmeal. Now we switch a little between the two and having recently bought a waffle iron, he’s thankfully embraced waffles as an alternative as well. Within these, though, I still like to mix things up a bit and have a bit of diversity in what he eats (and me, since I tend to just make enough of whatever I make him for me as well), as well as adding some healthier elements. I never appreciated as a kid myself how important breakfast was to get you going so I want to set things up well for my kids. I am always on the lookout for new ways to sneak in some different things and make breakfast more varied for me, while still appealing to his need to have things more or less the same. These blueberry granola waffles fit that space perfectly – they’re filled and topped with healthy blueberries and have a fantastic mix of wholegrains from the granola I’ve included. Oh, and they’re incredibly delicious and easy. What more could you need to start your day?
Having now got a waffle iron, I really wonder why I didn’t get one sooner as you can get a pretty decent one cheaply and the smell alone of waffles cooking in the morning is enough to get you going, let alone the taste. Also, having made pancakes for a while, I have to say I’m loving how much more hands-off the cooking is for waffles – I can set the timer and make my coffee while one cooks rather than having to watch them constantly, or risk overcooking them as can happen with pancakes. We still love pancakes, don’t get me wrong, but I’m finding I can be just as creative with what I put in waffles, with easier cooking.
Granola can make a great ingredient to mix in with other things such as these blueberry granola waffles. I love the fact it can add a great range of ingredients but you only measure one thing, and that’s definitely the case with the Quaker® Real Medleys SuperGrains Granola I used in these which I picked up at Walmart – it’s a fantastic mix of seven super grains and seeds, fruits & nuts. So rather than just the wholegrain wheat and oats as I’ve added in other waffles I’ve made, I’m also adding flaxseed, red quinoa, sunflower seeds, amaranth and barley; all ingredients I love, with a nice dose of fiber and omega-3 too. The blueberry pecan flavor is a great match here but I’m also looking forward to playing around with the cinnamon apple walnut variety.
These blueberry granola waffles are easy to make, with the batter only taking a few minutes to mix up then you pour it in the waffle iron, set the timer and leave it to get on with it. You can speed things up even more by mixing the dry ingredients the night before, so in the morning all you do is whisk the egg and milk and add them in. You can also make up the whole batch at the weekend, allow the ones you don’t need to cool and either refrigerate them overnight or pop them in a freezer bag and freeze them if you don’t need them for a few days. Then defrost them in the fridge overnight and re-heat them in the waffle iron for a minute when you want them.
I think one of the selling points for my son with waffles was being allowed to top them with a bit of maple syrup – I’m happy enough to have a little sweetness in there if it helps sell it as after all, these are pretty balanced all round. Being able to eat with your fingers and carry it with you if you are running late is an added bonus (for both him and me!). Although if I’m not running off, I really like them topped with some more blueberries and granola. The granola in the waffles goes slightly chewy but you get all it’s nice flavor coming through, so adding the contrasting crunch on top goes so well.
So why not mix up your breakfast a bit and give these delicious blueberry granola waffles a try? Pick up some Real Medleys SuperGrains Granola in the cereal/breakfast aisle next time you’re in Walmart along with the rest of the simple ingredients and get ready for some of the most deliciously flavorful waffles, without being too over-indulgent or difficult to make. They’re a fantastic way to start your day, even easier if you use my tips for making up a batch and storing them for later in the week. Then all you need to decided is how to top them – what would be your choice?
- 1 cup all purpose flour
- 1 cup wholewheat flour
- 1 cup Real Medleys Supergrains Granola - blueberry pecan flavor
- 1 tbsp baking powder
- pinch of salt
- 2 eggs
- 2 cups milk
- 2 tbsp vegetable oil
- 1 cup fresh blueberries
- maple syrup, confectioners sugar, blueberries, granola or as you prefer to top
- Mix together the all purpose and wholewheat flours, the granola, baking powder and salt in a medium-sized bowl (this can be done ahead of time and kept covered).
- Pre-heat your waffle iron.
- In a separate bowl, whisk together the eggs, milk and oil. Add this mixture, along with the blueberries, to the dry ingredients and mix well being careful not to break up the blueberries.
- Pour approximately 1 cup of the mixture in to the pre-heated waffle iron, flip (if possible, depends on model) and set the timer for 4 minutes.
- Carefully remove with plastic-coated tongs and serve, topped with your choice of maple syrup, blueberries, granola, confectioners sugar or the whole lot!
- Tip - make the whole batch into waffles when the batter is fresh as if not, they will not rise as well. Leftover, cooled cooked waffles can be re-heated after refrigerating or freezing and defrosting. They take around a minute to re-heat in the pre-heated waffle iron.
- Note timing and quantity of mixture per waffle are based on the typical measurements in my waffle iron's guide. If yours is different, adjust accordingly.
